Garden Tomato Soup
As a child, I wasn't a big fan of tomato soup. The reason for this, most likely, is that my only experience with it was seeing its condensed version of gloppy-ness poured from a soup can into the makings of a casserole every now and then. It would have NEVER occurred to me to order it in a restaurant.
Fast-forward to Autumn of 2009. My husband took me to a soup/salad/sandwich restaurant called Zupas. They had many delicious-looking soups, and they let customers sample as many as the customers desire. For some reason, I was compelled to sample their tomato-basil soup. MY TASTE BUDS WERE BLOWN AWAY! IT WAS ONE OF THE MOST DELICIOUS BITES OF SOUP I HAD EVER HAD! I ordered a large bowl, and savored every bite!
Several days later, I decided to try and "copy-cat" this wonderful tomato soup recipe. I searched the internet for the Zupas' recipe, but didn't come up with much. I started to experiment on my own. My first few attempts were "ok", but really nothing to rave about. I kept trying, trying, and trying, and eventually came up with one of my best creations to date. I love making this soup for family and friends. I have been making several batches lately because my tomato harvest was a great success this year! This soup is wonderful served with french bread, or grilled cheese sandwiches, or simply on its own. Enjoy!
Garden Tomato Soup
2 cups diced tomatoes (can use canned tomatoes if you like)
1/4 cup chopped fresh basil
1/2 cup chopped green onion
1/2 tsp minced garlic
1 tbsp chicken bouillon granules
1 cup apple juice
1 cup spinach leaves
1/2 tsp salt
1/3 cup sugar
1 cup water
1 tbsp butter
1/4 cup heavy cream
1/4 cup milk
Parmesan cheese, for garnish (optional)
Combine all ingredients in blender except butter, cream, and milk. Puree until smooth. Pour into saucepan. Add butter. Simmer for 20 minutes. Stir in cream and milk. Serve warm!
